Gut Loving Recipe - Roasted artichoke salad

Ingredients

3 servings

- 1 bag of kale (massage the  leaves with olive oil).

- 1/2 cup of walnuts

- 1/3 cup of dried cranberries

- 4 Jerusalem artichokes sliced  into 1-1.5 cm pieces

- Salt

- Thyme

Dressing

- 2 tbsp of olive oil

- 1 tbsp of maple syrup

- 2 tbsp of sherry vinegar

or wine vinegar

- Salt

Method

1. Bake the sliced Jerusalem artichokes with olive oil, salt and thyme for 30-35 min at 180C (until golden and crispy).

2. Add the massaged kale and and put back for 3 minutes.

3. Roast the walnuts for around 5 min, be careful not to burn them

4. Mix the kale, Jerusalem artichokes, walnuts, cranberries and dressing altogether and plate up. Enjoy!
