Gut Loving Recipe - Fibre pancakes

Serves 2

Required: Nutribullet/blender

Ingredients

  • 1-2tsp coconut oil for frying

  • 140g plain flour (gluten free works!)

  • 2 tbsp linseeds

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 banana

  • 240ml oat milk (or alternative)

  • An egg

Toppings

  • Maple syrup

  • Fruit - blueberries are great

  • Yoghurt

Method

1.  Heat a pan with the coconut oil

2. Blend all the pancake ingredients until smooth

3. Pour even amounts of pancake mixture. Top tip: use half a ladle as guide

4. Flip your pancakes after 2-3 minutes and continue to cook for a further two minutes until slightly bronzed on both sides

5. Serve with your favourite toppings
